I don't care for this defensive indifference rule.

When a runner steals a base, he doesn't know if the defense will try to get him out or not. He just attempts to steal the base, and, if successful, should be credited for having done so.

Agreed in some cases. However, if a runner knows that if his team is down by several runs with a couple outs in the 9th, you often see them take a base, and you would have a hard time convincing me that they don't know full well that the defense doesn't care.

If I leave an old table and chairs on the street corner for anyone to take and someone takes it, it is not stealing.

Even if the person who takes the table and chairs thinks that they are stealing, they are not.

If the defense doesn't care if a runner advances, that runner is not stealing anything - no matter what he thinks. He's merely advancing a base without any effort to stop him.
